Akamoku (Sargassum seaweed)

Akamoku is a type of seaweed known for its extreme vitality. It grows in the shallow offshore waters around Japan. Recent research shows that akamoku, which has a distinctive viscous texture, is surprisingly rich in fucoidan, a polysaccharide that has the ability to boost the immune system, and fucoxanthin, a pigment with anti-obesity effects. Its refreshing and subtle flavor makes akamoku the perfect addition to salads, soups and pasta.

Japanese cuisine, or Washoku, is now becoming a hot international topic as a symbol of a wholesome lifestyle and spirituality. In Los Angeles, for example, seaweed-topped rice dishes (Kaiso-don) are a popular menu in trendy cafes and bistros. Akamoku is expected to further popularize the exquisite taste properties and appeal of seaweeds around the world. (Shujiro Kusumoto)
